Broccoli Salad

Ommggg, have I been wanting to make this salad forever! I guess I always just thought it was hard but it's so easy!

Ingredients: 


  • bunch broccoli, uncooked, washed, cut into florets
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup red onion, chopped
Dressing:
  • 1 cup mayonnaise
  • 1/3 cup sugar
  • tablespoons apple cider vinegar


Directions:

Mix the broccoli, bacon and onions in a large bowl.
In a second bowl, beat dressing ingredients together gently until smooth.

  1. About 1 hour before serving, toss the salad with the dressing to allow flavors to meld.

$10 and a Pear

This is so lame but i'm sharing anyway. So almost every Saturday morning the hubby and I watch Man v. Food on the Travel Channel, laying in bed with empty stomachs we watch as Adam Richman travels the country in search of America's greatest food challenges. Anyway, last weekend was no different, we watched an amazing looking Calzone being made and ever since I have been craving one! Well today a group of people were ordering from Neno's Cafe here in Torrance (I have never eaten there before) and well a light went off in my head and I was so excited, I was finally going to satisfy my craving for that damn Calzone!! I placed my order and when the food arrived I did not hesitate to dig in, it was beautiful looking, it was loaded with pepperoni and cheese and when I took a bite I about lost it! This was by far the saltiest piece of food that I have ever tasted in my life, I mean horribly salty! I forced myself to eat the slice that I had cut off and tossed the rest, what a disappointment. Now I am down $10 and I feel like crap...

Wandering around the office feeling bloated as all get out and sucking down as much water as I could muster I pass by my bosses office and it was like a light had broken through the ceiling shinning onto her conference table, in the middle was the most beautiful fruit bowl you ever did see! All I could think was if I eat a piece of fruit it might neutralize the salt taste in my mouth!!! So I grabbed the biggest pear that I think I have ever seen in my life and started eating it, for those of you that know me really well know that I am allergic to to some fruits and veggies, like Kiwi, Avocado, Bananas, just to name a few.   Well my lips began to feel puffy and well apparently I am also allergic to Pears!!

So now not only am I down $10 from a crappy Calzone, I feel yuckie and I had an allergic reaction to yet another piece of fruit!!

Mom's Beef Strognaoff

Preparation Time: 30 minutes


Servings: 6 - 8


Ingredients:
2 lbs. Sirloin Steak
1/4 cup Butter

1 can (6 oz.) Sliced Mushrooms, drained
2 cans (10 1/2 oz. each) Beef Broth
1/3 cup Minced Onion
1/4 cup Ketchup
1 1/2 teaspoon Garlic Salt
1/3 cup Flour
2 cups Sour Cream
1 package (8-10 oz.) noodles
3 tablespoons Butter

Cut meat into small chunks. Melt 1/4 cup butter into large skillet, stir in Mushrooms and cook for approximately 5 minutes; remove mushrooms and set aside.

In the same skillet brown meat. Reserving 2/3 cup of Broth, stir in remaining Broth, Minced Onion, Ketchup and Garlic Salt. Cover and simmer for 15 minutes. Blend reserved Broth, Flour and Mushrooms into the meat; heat to a boiling stirring constantly for 1 minute. Stir in Sour Cream and heat thoroughly.

Cook Noodles as directed on package, drain and toss with 3 Tablespoons of Butter. Serve with Stroganoff.

Mother's Day is coming...

Mother's Day is fast approaching and also happens to be my favorite holiday of the year! I think it may be because it is a day that is all about me and my beautiful children.

Well, this year it is all new, I am now married and have gained two additional children to which will get to share this holiday.

What do I want you ask, nothing too flashy just a new car maybe. 

All joking aside what I really want is to jump in the car, husband and kids in tow and drive to Bishop for the weekend to be with my Nana. It has been just over 6 months since I last saw her and before that way longer (shame on me!).

She is a graceful 93 years old and just so happens to be MY person, she was always there for me growing up! From helping me out financially over the years when I wasn't doing so great to taking me to the DMV when I was 16 years old to get my driver's license. I miss her dearly, there isn't a day that goes by that she isn't somewhere in my thoughts.






Tea Party Fun





This past Saturday I had the honor of helping my sister-in-law (also Amy Martin :)) prepare a lovely tea party for our mother-in-law Gabi. Amy went all out and obviously spared no expense because this tea party had everything you could ever want!













Green Chile Chicken Enchiladas







Ingredients:
  • 2 lbs. Chicken Breast
  • 1 can (28 oz.) Las Palmas Medium Green Chile Enchilada Sauce
  • 1 Large Brown Onion
  • 1 Bag Mild Cheddar Cheese
  • 1 bag small flour tortillas

Boil chicken, about 20 minutes.
Shred Chicken Breast with a fork
Chop onion
In a bowl mix the shredded chicken and the onion together, add some of the green sauce just enough to make the mixture stick together (about 1/2 cup)
Spray baking dish with non-stick spray
Fill tortillas with mixture, add some of the green sauce* and cheese
Roll tortillas and place side by side in baking dish
Cover with foil and bake about 30 - 40 minutes
Remove foil and bake for another 10 - 15 minutes

*I usually pour all of the green sauce into a salad dressing bottle because it's easier to pour.
