Mom's Beef Strognaoff

Preparation Time: 30 minutes


Servings: 6 - 8


Ingredients:
2 lbs. Sirloin Steak
1/4 cup Butter

1 can (6 oz.) Sliced Mushrooms, drained
2 cans (10 1/2 oz. each) Beef Broth
1/3 cup Minced Onion
1/4 cup Ketchup
1 1/2 teaspoon Garlic Salt
1/3 cup Flour
2 cups Sour Cream
1 package (8-10 oz.) noodles
3 tablespoons Butter

Cut meat into small chunks. Melt 1/4 cup butter into large skillet, stir in Mushrooms and cook for approximately 5 minutes; remove mushrooms and set aside.

In the same skillet brown meat. Reserving 2/3 cup of Broth, stir in remaining Broth, Minced Onion, Ketchup and Garlic Salt. Cover and simmer for 15 minutes. Blend reserved Broth, Flour and Mushrooms into the meat; heat to a boiling stirring constantly for 1 minute. Stir in Sour Cream and heat thoroughly.

Cook Noodles as directed on package, drain and toss with 3 Tablespoons of Butter. Serve with Stroganoff.

Mother's Day is coming...

Mother's Day is fast approaching and also happens to be my favorite holiday of the year! I think it may be because it is a day that is all about me and my beautiful children.

Well, this year it is all new, I am now married and have gained two additional children to which will get to share this holiday.

What do I want you ask, nothing too flashy just a new car maybe. 

All joking aside what I really want is to jump in the car, husband and kids in tow and drive to Bishop for the weekend to be with my Nana. It has been just over 6 months since I last saw her and before that way longer (shame on me!).

She is a graceful 93 years old and just so happens to be MY person, she was always there for me growing up! From helping me out financially over the years when I wasn't doing so great to taking me to the DMV when I was 16 years old to get my driver's license. I miss her dearly, there isn't a day that goes by that she isn't somewhere in my thoughts.






Tea Party Fun





This past Saturday I had the honor of helping my sister-in-law (also Amy Martin :)) prepare a lovely tea party for our mother-in-law Gabi. Amy went all out and obviously spared no expense because this tea party had everything you could ever want!













Green Chile Chicken Enchiladas







Ingredients:
  • 2 lbs. Chicken Breast
  • 1 can (28 oz.) Las Palmas Medium Green Chile Enchilada Sauce
  • 1 Large Brown Onion
  • 1 Bag Mild Cheddar Cheese
  • 1 bag small flour tortillas

Boil chicken, about 20 minutes.
Shred Chicken Breast with a fork
Chop onion
In a bowl mix the shredded chicken and the onion together, add some of the green sauce just enough to make the mixture stick together (about 1/2 cup)
Spray baking dish with non-stick spray
Fill tortillas with mixture, add some of the green sauce* and cheese
Roll tortillas and place side by side in baking dish
Cover with foil and bake about 30 - 40 minutes
Remove foil and bake for another 10 - 15 minutes

*I usually pour all of the green sauce into a salad dressing bottle because it's easier to pour.

Happy Father's Day

Have I failed...

I have recently discovered that my daughter has been having some issues with her father's girlfriend. It is at the point to where she has retaliated in a "parent trap" kind of way. I went out last Friday night to Happy Hour with my girls and I receive a phone call from Taylor laughing and she proceeds to tell me that she hates her Dad's girlfriend and that last week her and her friend cleaned the toilet bowl with her toothbrush, put glue in her deodorant and spilled a bottle of perfume in the bottom of her purse and that she wasn't even close to being done with her! I was mortified and said to her that I was going to pretend that she didn't just call me with that information and that I would talk to her when I got home. When I got off the phone I told the girls what Taylor claimed to have done and they had the same look on their face that I am sure I had (complete disbelief)! When I got home I really didn't even have to really try to get the information out of her, she openly talked about it even in front of the girls. I don't think that even now after the punishment has been handed down that she realizes the damage that she caused. SO I thought about what Taylor had disclosed to me and decided that I should tell her father what she had done, I mean what if the girlfriend got sick and with no punishment and the fact that she said that she wasn't finished with her scared me terribly! I mean she gets mad at me and what would she do to me if she got mad enough? The worst part of the whole thing is that this little girl, my little girl has plotted for revenge against someone! Where did I go wrong? I no longer look at her the same way I did a week ago and that kills me! Her dad and I spoke with her and she told him that she hates her because she always yells at her and is mean to her. Of course he defended the girlfriend and denied that she is ever anything but nice to her. Then out of nowhere Taylor pulled her dad's own card on him! She said to him, why is it ok for you and not ok for me? He looked completely puzzled and asked Taylor what she meant and she looked at him and said, you bag on her all the time when she is not around so why is it ok that you can say stuff about her and I cannot feel that way? Of course he totally denied ever saying anything even though I myself have been subjected to him talking badly about her. He made her tell the girlfriend what she did to her and apologize, and of course the girlfriend yelled at Taylor and now refuses to be anywhere even in a room alone with Taylor. It has been two days since I told her dad and Taylor told me tonight that she still doesn't understand why she id in so much trouble and that what she did wasn't so bad! SO I ask the question to myself again, have I failed?
